The grapes were carefully selected and hand-picked in lugboxes and then placed into a cold-room to be kept at 5̊C overnight. The following morning half the grapes were whole-bunch pressed, and the other half de-stemmed and crushed.
After settling, 30% of the juice was racked into barrels without yeast for natural fermentation, and 70% inoculated with yeast before racking into barrels for alcoholic fermentation to occur.
Malolactic fermentation took place naturally in all the barrels.
Fermented and aged in only French oak barrels for 11 months (40% new, 30% 2nd-fill and 30% 3rd-fill).
Battonage: To enhance the mouth feel, stirring of the lees was regularly done during the maturation period.
Tasting notes – Sublimely elegant and classically styled. The ripe summer fruit enriching the wine is a great reflection of the warm, dry conditions of the summer of 2016. The wine is generous on the nose, showing white peach and lemon with undertones of vanilla and butterscotch. The palate has great complexity with rich stone fruit and creaminess on the tongue, which is beautifully balanced by the fresh natural acidity and a long-lasting clean and fresh finish.
