Preparation of wine:
Handpicked grapes were transported to the cellar for immediate processing. Light whole bunch pressing of the grapes ensured for optimal colour, flavour and phenol extraction. The juice was left to settle for 24 hour and racked
to stainless steel tanks. The cold alcoholic fermentation ensured the preservation of wine’s aromatics. Tirage / bottle fermentation followed. The wine was aged in the bottle for 20 months before disgorgement.
Lush redcurrant & strawberry notes with creamy mascarpone & brioche on the nose & palate. Mineral acidity leads to lingering mousse & finish
The wine pairs well with all seafood. It is also the perfect accompaniment to enjoy at any celebration. For the more adventurous: a lovely compliment to desserts.
